Egg Salad and a Greek Lunch

The temperature has been at 100 degrees for days and the humidity is making me nuts. We go to the gym earlier each day but today I had a terrific aquacise class and I feel great. Yesterday my energy came from another source, one that I have not used in many, many months. In my single days I relied on eggs for both dieting and economy. Sometimes I forget just how cheap eggs are and how much real food value they offer.

So a couple of days ago I made my latest version of a healthy egg salad; healthy meaning the use of just two egg yolks for a batch of ten egg whites. This because a whole egg contains 78 calories; of those calories just 15 are contained in the white (a total protein source), while the othe 60+ are in the yolk (total fat). EGG SALAD ENERGY BREAKFAST or LUNCH
Summer is the time for light eating, lots of salads and staying as active as possible UNLESS the temperature reaches the 100° mark and then hi-energy foods are needed.

To make a Batch
10 Egg whites
2 Egg Yolks
3 Tablespoons Hellman’s Canola Mayo
Dash of Wasabi mustard
Chopped scallions ( could add chopped bell pepper, fennel or celery for crunch, sesame seed or pine nuts, or even chopped olives).
Salt & pepper to taste, or a shot of Adobe seasonings, as you wish.
Total batch equaled 425 calories for just under a Quart of salad mix.

Serving: approx. six servings at
Top a toasted English Muffin (Bays are my choice), a whole muffin counts 132 calories
Spread about 1/3 of cup of salad mix, or about 70 calories and serve.

For two halves and two-thirds of the egg salad you net about 272 calories per serving (or half that if you share with someone else).

Will keep in the fridge for 2-3 days, is just as good for breakfast as lunch. The energy you get from the whole muffin and salad will get you through an aquacise, some shopping, a lunch date and back home to prep dinner. Better than an energy bar!

Yesterday (Tuesday),  I was seeking a fast breakfast with no time for cooking anything, I spread the egg salad on toated muffins and took them with me for a traveling brunch. I felt great for the rest of the day and had more pep than I've had in days. Must have been the egg-protein.

But lunch was my real treat of the day.  To celebrate a friend's birthday (July 16th), three of us headed to Spartacus Restaurant in Durham for a taste of Greek food and a long chat.  See: Spartacus Restaurant
We had been there for lunch 12 years ago and I had not been back since but I did remember the taste of the Gryo plate.  Yesterday we had the Greek Buffet with Gryos, Tzatziki sauce, Pitas, Spanakopita, the works. I just figured out the calories consumed at one meal and I am shocked. That's why I am back to a plain toasted muffin, vegetable soup and unsweet tea today. Got to shake those calories loose.

Still I cannot wait for another opportunity to try the buffet again. Love that gyros!
